Ingredients:
- ⅓ cup sliced almonds
- 450g green beans, trimmed and cut into 2-3” long pieces
- ¼ cup water
- ½ tsp salt
- 2 tbsp extra-virgin olive oil
- 1 tbsp lemon juice
- 2 tsp Dijon mustard
- 1 clove garlic
- ½ tsp black pepper, preferably freshly ground
- ½ tsp red pepper flakes
- ¼ cup crumbled feta or Danish White cheese
- 3 to 4 large basil leaves, torn or chopped, for garnish
- Zest from ½ lemon, for garnish
Instructions:
- Put a heavy bottomed pan on medium heat. Add almonds and cook, stirring frequently, for about 2 mins on medium heat. Reduce heat to low and continue cooking until almonds turn fragrant and golden. Transfer almonds to a plate to cool
- Place pan back on heat and add green beans, water and ¼ tsp salt. Cover and cook until beans are tender, 7-8 mins. Remove lid and turn heat to high and cook until the liquid evaporates, stirring frequently, 2-3 mins. Remove the pan from heat and set aside to cool
- Whisk together the olive oil, lemon juice, mustard, garlic, black pepper, red pepper flakes and remaining ¼ teaspoon salt. Pour the dressing into the pan. Add almonds, half the feta and toss to combine. Taste and adjust the salt, lemon or pepper as required
- Transfer to a serving bowl. Sprinkle remaining feta and garnish with basil leaves and lemon zest.
