Ingredients:
- 2 ripe Alphonso mangoes, diced (approx. 3 1/2 cups)
- 1 tsp. freshly squeezed lime juice
- 1/4 cup lukewarm water
- Optional: caster sugar; salt – ½ tsp; tequila / rum – 1 tsp; jalapenos – 2-3 slices
- Mint leaf, for garnish
Instructions:
- Peel and dice the mangoes. Taste a dice for sweetness.
- Lay the dices out on a tray lined with butter paper
- Freeze the mango until frozen solid (3-4 hours in the freezer)
- Place the frozen diced mango into a food processor / blender. Add freshly squeezed lime juice. Add lukewarm water. Add salt, tequila / rum and jalapenos if you like a little bit of heat and flavour complexity, and for variations on the base recipe.
- Blend until smooth. Taste – add caster sugar if you require more sweetness and blend for a further 10 seconds
- Eat immediately for a softer texture, or transfer into a freezer-safe container and freeze for 3-4 hours or until firm
- Scoop out servings into chilled bowls, and garnish with whole fresh mint leaf
- Consume as a dessert or as a healthy any-time snack
