Ingredients:
- 200 grams digestive biscuits
- 100 grams melted butter
- 2 apples, cored, peeled and sliced into 5 mm thick slices, and then cut into small bite size pieces
- Handful of raisins, soaked in warm water for 30 minutes
- 1 tbsp lime juice
- ½ tsp ground cinnamon
- ¼ tsp ground nutmeg
- ½ cup brown sugar
Instructions:
- Preheat oven to 180C
- Crumble the digestive biscuits into powder. In a bowl, add the crumbed biscuits and melted butter. Mix well
- Line the bottom of a glass baking dish with the butter-biscuit mixture, pressing slightly with your hands
- In a separate bowl, add the apples, soaked raisins, lime juice, cinnamon and nutmeg. Mix well
- Add the apple mix into the baking dish and spread evenly over the biscuit base
- Sprinkle the brown sugar evenly over the apple mix
- Bake for 40-45 mins until cooked
- Serve hot, as-is or preferably with a scoop of vanilla ice cream.
