Ingredients:
- 1/4 cup neutral refined oil of your choice
- 3 tsp mixed dried herbs (1 tsp each of oregano, thyme and rosemary)
- 1 tsp chilli flakes
- 2 cloves garlic, grated
- 2 onions, finely chopped
- 2 cups hung yogurt
- 1 tbsp lime juice
- 1 tsp lemon zest (avoid using lime zest, whose flavour can be overpowering; skip this if lemon zest is unavailable)
- 2 tbsp chopped olives
- Salt to taste
- 1 tbsp extra virgin olive oil
Instructions:
- Heat refined oil in a small saucepan
- Add dried herbs and crushed red pepper and cook on medium-low heat to release the flavours of the herbs, stirring occasionally, for about 2 minutes. Remove from heat. Add garlic and 3/4 of the onion while the oil is still hot. Stir to combine. Let cool for 5 to 10 minutes.
- Once the oil is cooled, combine yogurt, lemon zest, lime juice, chopped olives, salt and herb oil in a bowl. Taste and adjust salt and lime if required.
- Top with remaining onion, olive oil and some dried oregano and chilli flakes.
- Serve with chips, crisps, vegetable sticks or toasted bread sticks.
