Herb Yogurt Dip

Ingredients:

  • 1/4 cup neutral refined oil of your choice
  • 3 tsp mixed dried herbs (1 tsp each of oregano, thyme and rosemary)
  • 1 tsp chilli flakes
  • 2 cloves garlic, grated
  • 2 onions, finely chopped
  • 2 cups hung yogurt
  • 1 tbsp lime juice
  • 1 tsp lemon zest (avoid using lime zest, whose flavour can be overpowering; skip this if lemon zest is unavailable)
  • 2 tbsp chopped olives
  • Salt to taste
  • 1 tbsp extra virgin olive oil

Instructions:

  • Heat refined oil in a small saucepan
  • Add dried herbs and crushed red pepper and cook on medium-low heat to release the flavours of the herbs, stirring occasionally, for about 2 minutes. Remove from heat. Add garlic and 3/4 of the onion while the oil is still hot. Stir to combine. Let cool for 5 to 10 minutes.
  • Once the oil is cooled, combine yogurt, lemon zest, lime juice, chopped olives, salt and herb oil in a bowl. Taste and adjust salt and lime if required.
  • Top with remaining onion, olive oil and some dried oregano and chilli flakes.
  • Serve with chips, crisps, vegetable sticks or toasted bread sticks.
