Pea Soup

Ingredients:

  • 1 tbsp butter
  • 1 medium onion, chopped
  • 2 cloves garlic, chopped
  • 2 cups peas (approximately 275 grams)
  • 4 cups vegetable broth
  • ½ tsp Kilmora thyme
  • Salt, to taste
  • Small pinch of nutmeg powder
  • Freshly ground black pepper, to taste
  • 2 tbsp thick plain curd / yogurt, whisked to a creamy texture
  • 1 tbsp extra virgin olive oil

Instructions:

  • Heat butter in a pan. Add onion and saute on medium heat until translucent, about 3-4 minutes
  • Add garlic and thyme and saute, stirring, for about 30 seconds
  • Stir in peas and saute over high heat for 1 minute, stirring continuously
  • Add vegetable broth and bring to a boil
  • Reduce heat, cover and cook until peas get tender, 3-4 minutes
  • Blend the soup using a hand blender (recommended) or a mixer-grinder – if using a mixer-grinder, make sure to cool the soup down before blending
  • Mix in the nutmeg, salt and black pepper to taste
  • Heat the soup before serving.
  • To serve, pour soup into soup bowls. Garnish with beaten yogurt and a drizzle of olive oil
