Ingredients:
- 1 tbsp butter
- 1 medium onion, chopped
- 2 cloves garlic, chopped
- 2 cups peas (approximately 275 grams)
- 4 cups vegetable broth
- ½ tsp Kilmora thyme
- Salt, to taste
- Small pinch of nutmeg powder
- Freshly ground black pepper, to taste
- 2 tbsp thick plain curd / yogurt, whisked to a creamy texture
- 1 tbsp extra virgin olive oil
Instructions:
- Heat butter in a pan. Add onion and saute on medium heat until translucent, about 3-4 minutes
- Add garlic and thyme and saute, stirring, for about 30 seconds
- Stir in peas and saute over high heat for 1 minute, stirring continuously
- Add vegetable broth and bring to a boil
- Reduce heat, cover and cook until peas get tender, 3-4 minutes
- Blend the soup using a hand blender (recommended) or a mixer-grinder – if using a mixer-grinder, make sure to cool the soup down before blending
- Mix in the nutmeg, salt and black pepper to taste
- Heat the soup before serving.
- To serve, pour soup into soup bowls. Garnish with beaten yogurt and a drizzle of olive oil
