This Spicy Feta dip is creamy and tangy with the right amount of salt, spiciness, and acidity. Serve as an appetizer with pita crisps or grilled sourdough bread.

Ingredients:
- 250 g feta (or Danish White) cheese, drained and cubed
- 2 roasted red bell peppers, skinned and de-seeded, roughly chopped
- 1-2 clove garlic, chopped
- 3-4 slices jalapeno, chopped
- 1 tbsp red wine vinegar or substitute with any vinegar
- 2 tbsp extra virgin olive oil, plis 1 tsp for drizzling
- 1 tsp chilli flakes
- 4-5 kalamata olives or black olives, chopped, for garnish
- 2 tbsp finely chopped fresh parsley/coriander, for garnish
Instructions:
- Add the feta (reserving a small quantity of the feta for garnishing), red bell peppers, garlic, jalapeno, red wine vinegar and 2 tbsp olive oil to a blender. Blend to a smooth paste
- Transfer to a serving bowl. Drizzle 1 tsp of olive oil, and garnish with crumbled feta, chilli flakes, chopped olives and parsley
- Serve with pita crisps and grilled bread
